FRESH DUNGENESS CRAB RECIPE SERIES: Crab Fried Rice Recipe

Transform leftover rice into a gourmet dish with this Crab Fried Rice recipe.
It's a straightforward, delicious way to enjoy the flavors of Dungeness crab, combined with the classic elements of fried rice.
Ingredients:
- 2 cups of day-old short-grain rice
- 1 lb Dungeness crab meat
- 2 eggs
- 1 cup peas
- 1 cup diced carrots
- 3 tablespoons soy sauce
- 2 green onions, sliced
- 2 tablespoons vegetable oil
- Salt and pepper to taste

Prepare the Eggs: Heat a tablespoon of oil in a large pan over medium heat. Scramble the eggs until just set, then remove them from the pan.

Stir-Fry Vegetables: Increase heat to high, add the remaining oil, and quickly sauté the carrots for about a minute. Add peas and continue to sauté for another minute.

Add Rice: Introduce the day-old rice to the pan, breaking up any clumps. Stir well to combine with the vegetables.

Season: Pour soy sauce over the rice mixture and stir. Season with salt and pepper according to taste.

Mix in Crab and Eggs: Lower the heat to medium. Fold in the crab meat and scrambled eggs, taking care not to over-stir to keep the crab pieces intact.
