Slightly pink and very flakey, these are cut daily from local Halibut. Because it is so delicate and so rare (there are only 2-4 small pieces per fish depending on the size and how it is cut), it is most often found served as sushi or sashimi and may be lightly heated with a blowtorch to emphasize the subtle oils.
Slightly crunchy and chewy with a mild oil flavor, this cut of fish is so delicate, it is prized for sushi, where it is often scored to soften the crunch.
