The Carmona mix, named for the Andalusian town where the Losada family have grown and processed olives for 60 years, combines underutilized and common Spanish olive varieties Zorzaleña, Verdial, Cornicabra, Gordal and Cuquillo. The result is a range of colors, calibers, textures and flavors in a single jar which makes for a great display on the counter top or olive bar. Each variety is cured separately before blending in a natural brine solution without the use of lye. A great option for a pre-made mix including lesser known olive varieties, the Carmona mix is best served with a glug of O-Med extra virgin olive oil from neighboring Granada, or tossed with a house-made marinade.
