This fish was insane! I cut off the skin and cut away a little of the red (not too much) then froze it for 2 hours so I was able to slice it paper thin. A little oil, a little soy, some shaved radishes and Serrano pepper then a sprinkling of Malden sea salt and it was as good as the crudo I had at Esca back in NYC. May keep some around in my freezer, just to 'throw something together' when guests come over! : )

I order this Hamachi once a month and it never disappoint me! I usually eat it in half as sashimi and half as teriyaki and they both taste excellent. I used to order Hamachi from Japanese fish store which is imported from Japan but the one from Four Star tastes better and more fresh so I had decided to order from here.

Yum! I've prepared this at least 3 times, simply slicing it, drizzling with ponzu shoyu (soy sauce with yuzu and lemon), topping with a bit of yuzu kosho (red and green, but we preferred red), and sliced jalapeno. The plate gets gobbled up each time!

I bought Hamachi from Fourstar twice, first time we ate it as sashimi, second time I cured it and served at a dinner we hosted with some friends. The quality of the fish is great, however second time I got a tail piece so not really the best for sashimi purpose. Will order again though.
