These 1/4" to 3/4" pieces of skin off backfat come from the Wolfe Ranch Mangalitsa pigs that we get in from Brent Wolfe. It is simply some of the best pork fat in the world. Many expert charcuterie makers have marveled at its flavor, which comes from the pigs genetics, diet of barley, and pasture-raising. We love to use it for charcuterie and sausage making, curing for lardo, rendering for cooking, or slicing thin for wrapping cuts of meat and fish before roasting. Each piece is ~2lbs.
