Sold in 2lb increments, roughly four sardines per lb. These arrive whole and are ideal for curing, grilling, or traditional Japanese preparations. Not scaled or gutted.  They are a premium variety from the Toyama Prefecture, JP.

Iwashi, or Japanese Sardine, is celebrated for its rich, oily flesh and shimmering silver skin. Because of its high omega-3 content, it spoils quickly and was traditionally grilled rather than eaten raw. It wasn’t until refrigeration became common after WWII that iwashi found its place in sushi. Even today, it’s typically prepared Edomae-style—lightly salted and marinated in rice vinegar to preserve freshness and balance its bold, savory flavor.

Culinary Notes:

  • Flavor: Deep, rich, and umami-packed, with sweet-sour notes if cured.

  • Texture: Silky, tender, and delicate.

  • Best Uses: Salt and vinegar-cured for sushi, grilled whole, simmered, or fried.
