Grateful to have such fresh and sweet scallops! It was actually easy to clean. The roe was flavorful and creamy while the scallop was sweet and tender. I saved the mantle and cleaned with corn starch. It was actually crunchy when cooked. Per Jeffery, these scallops can be stored dry and cold until I cook. So I could get more at any one time.

I wish I had taken a photo. Baked them in the shell, simply with butter and bread crumbs…. Absolutely delicious. This is the standard by which I shall judge every scallop forward.

The flavor was exceptional, with that elusive sweet ocean/liquor taste. As good as the best scallops we have had anywhere. Easier to open than expected. Much easier than oysters or clams. Some had sand inside and needed a rinse. Sad that i left a little of the muscle on the top shell each time. Might do better w flexible knife. Enter next to hinge and sweep thru the muscle against the shell.
4 per person ($30) turned out to be an appetizer portion. Maybe an ounce each. Including the recovered trimming. Consensus around the table was that a 1.5lb lobster (also $30ish) is more yum per buck (unless, perhaps, you know what to do with the roe).
