8 fresh sardines, cleaned and gutted

2 lemons, thinly sliced

1/2 cup sun-dried tomatoes, roughly chopped

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh thyme sprigs, for garnish
Instructions:

Preheat the Grill: Preheat your grill to medium-high heat.

Prepare the Sardines:
- Rinse the sardines under cold water and pat them dry with paper towels.
- Place the sardines on a large baking sheet or platter.

Marinate the Sardines:
- In a small bowl, mix together the olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper.
